A bone-in (occasionally boneless) roasting joint from the shoulder of our Wild Boar, perfectly suited for a dinner for four. [We recommend slow cooking (fat side up) for a good 12 hours or so , at 120 degrees, a simple rub of salt, black pepper and garlic suits this joint perfectly and champions the incredible Wild Boar flavour!]
